Year 10 pupils studying food preparation and nutrition at Bolton School girls’ division have enjoyed a talk and demonstration by a former Lancashire Young Chef of the Year. Lewis Gallagher, who is also a butcher, plies his trade at the Provenance food hall and restaurant, Westhoughton.
Food technology teacher, Natalie James, said: “The girls watched a demonstration from Lewis and then worked hard to quarter a whole chicken, before being shown how to use the cuts in four different dishes, ranging from simple to restaurant-ready: salt and pepper chicken wings; chicken with roasted vegetables; BBQ kebabs with aubergine; and breast served on mashed potatoes with a creamy mushroom sauce. The girls will use this to inspire their practical work.”
Brian Tinniswood, who founded Provenance with wife Karen and brother Rob, said: “Our team shares a passion for bringing great food to the people of Westhoughton, all of which is sourced from local producers and suppliers. We have had a really enjoyable morning at Bolton School, and the girls have worked well and been fully engaged.”
Provenance, which features in the Good Food Guide, was founded in 2015 and recently expanded its premises into a former NatWest Bank in Westhoughton.
